Probably a stupid question

I'm needing new struts and suspension on my 2016 SR5. It's stock right now. I don't do anything crazy off-road, and don't really plan to. Just wanna be able to get to camping locations and stuff that would require some light-medium off-roading. I might do a little over landing at some point, but again, nothing crazy lol. So my plan was to get adjustable Bilstein's for the front and regular Bilstein's for the back. I have an extended warranty that covers struts, so I was gonna just get OEM ones. But I don't think I was correct on my understanding of what a strut was lol. I'm somewhat new to all this. When I looked at struts on different marketplaces, they show the spring and shock combo. A) what is a strut? B) can I buy the shocks I want and a spring (coilover?) And use them together?
