Salad made from lettuce, beets, grapefruit, fresh rosemary, and Newman’s lemon basil vinaigrette
I’m definitely loading up, don’t worry. Something like this is what I do if I had a big breakfast, or know I’ll be having a big supper. Otherwise, I’ll have this for an early first lunch, and then a protein-heavy second lunch a few hours later, of 200-300 cal. I’m supposed to be limiting to 1500 cal a day, but most days I blow it.
It’s good. The beets are sweet but neutral, so the whole overall flavor is citrusy vinegar. Which I love. And it leaves the plate a beautiful fuchsia color.

I will have a protein snack in a couple hours. Probably a hard-boiled egg and a string cheese
