How to record my trail run?

I usually start my run from my home and go through canal road then into the Texas brush, over a highway and over a fence, through a pecan orchard, to the rio grande, usually run into Border Patrol and can see Mexico from the Texas side. I quite enjoy this run, knee pain and all, usually take my dog with me, I have a go pro, but don’t know where to mount it for the best view. Any advice would be appreciated. It’s about a 5 mi run
