Smoked my first Rack o Lamb last night and about died from happiness and joy.
Super simple and doesn't take long.
1) Little olive oil rubbed on as a binder. 2) Tinder Prime Rib Black Garlic and Truffle rub (costco). 3) Go over again with Paprika. 4) Use smoke setting (mine runs hot, sat at about 230 the whole cook) 5) Smoke about an hour or until internal is 135. 6) Pull and rest for 15-20 min until internal is 125. Use this time to either fire up the grill or smoker to high. 7) Reverse sear by putting on grill for about 1.5-2.5 minutes a side until internal is at 135 again or exterior looks presentable. 8) Rest 5-10 min, slice and serve. No need for a sauce.
Whole cook takes about 1.5 hours with rests, plus whatever time you prep and let the rub sit in. I did mine about 2 hours before starting.
This was my first attempt at lamb and I honestly think this is the best food I've ever made and easily in the top 5, and possibly running for best food I've ever tasted.
I have such nostalgic love of my mothers lamb and all other lamb I've ever had has never come close to it... But THIS LAMB... honestly might have dethroned it, which I just didn't think possible, let alone my first time.
Seriously give it a try and tell me it isn't amazing. I dare you.
And yes ill admit I was trying to change it from shanks to rack. Forgive me I was in a blissful meat and drink coma when I wrote it last night.
