My main knives are OK, nothing fancy, but have not been treated well in their teenage lifetimes. I have a few Hankle Zwilling, and an abused 8" Wustof Chef.
Early on they suffered through an electric sharpener, for the poor Wustoff to the point I had to Dremel off some of the bolster to get her to make contact with the board all the way down for chopping.
I got a King 1000/6000 combo stone and I am trying to get them back in fighting shape, and I think i am doing OK in that I get a decent edge, but it doesn't last.
Looking at the imagery here, I know I don't have a good bevel. It seems "rounded" not nice and flat judging by the reflection. My question is, do I need to go down to a low grit to get the bevel back to very flat? Should I just keep working on my technique to maintain a constant angle with the 1000 side? Should I get them cleaned up by a service then work on maintenance.
