I got a Coticule stone a week ago and used it to refine an already sharp edge on my shirogami 2 blade. My daughter picked it up and was trying to slice some tomatoes thin yesterday and it wouldn’t penetrate the skins. It was sliding across. She switched to my B1 that was finished on SG2k and it shaved thin slices like you’d see on a youtube video. What the hell happened to that S2? It cut paper and felt sharp. I don’t think I did anything to ruin the edge- just polishing by stropping on the coticule. Could I have gotten it so thin it rolled or crushed (I doubt), or just had no tooth? I put it back on the SG2k today and it cuts like crazy. Maybe the 2k is optimal for kitchen work?
