Server Ideas - Running out of *NEW* projects

Hello all,

I have been running a homelab for a long time now, and I have an array of different projects that I started, maintain, and use on various levels. I am starting to run out of new ideas to setup, which is kind of a bummer, so I figured maybe this great subreddit would help me find some!

I'm going to tell you about the server, network, and what is currently running in hopes that it could assist someone in assisting me!

Server:

  • Xeon E5-2650
  • 64 GB ECC RDIMM
  • 16 TB Storage (About 6TB free)

Network: (Note: it is all Ubiquiti)

  • UniFi Security Gateway
  • 2 UniFi 8-Port POE Switches
  • 3 UniFi AP AC Pro's
  • CAT6 Run internally between hardwired connections

Server OS/Details:

  • Running ESXi 6.5
  • Currently has VM's running:
  • Mining VM with PCI-e pass through video cards: Windows & Linux versions of this VM with PCI-e pass through to a 980 Windforce OC
  • CertBot control box: control box to automatically push LetsEncrypt SSL certs to the other web server boxes
  • GitLab: internal git server for company and team projects
  • Guacamole: this was never completed.. it was just a test honestly
  • Jenkins
  • Grafana, Collectd, etc (data collection/resource monitoring of VM's, network and ESXi server)
  • OpenHAB: internal/remote control for connected lights
  • OpenVPN
  • Plex
  • Windows 2016 server: running AD, DNS, File Server, Print Server
  • Other misc. VM's that I use for various other uses

So basically, I am looking for new ideas to work with like some of these, or totally different. Even if the software doesn't fit any use case, I might just set it up and play around with it so I can add it to my experience. Give me a challenge ;)
