Howdy! I made some pasta last night and thought I'd share my recipe! This is a very basic, easy to make 2 pot dish!
You will need:
A pot to boil water
A pot big enough to make your sauce and cook your sausage in one :)
A wooden spoon
A spatula
A hungry belly :)
Ingredients:
16 oz package of hot pork sausage (can sub other meats)
28 oz can of crushed tomato (open this up before you start!)
1 medium onion, diced
4 cloves garlic, chopped
1/2 cup red wine (I used Cabernet Savignon)
salt, to taste
pepper, to taste
adobo, to taste
cayenne pepper, to taste
garnish: fresh parsley, chopped (I used dried, but wish I had fresh!)
1 package gemelli pasta (I like Barilla)
Directions
Boil your water for pasta, add salt. (Do this if you want to eat right away, if you choose to simmer the sauce for longer, wait until you're closer to eating)
Remove skins on sausage, cook in pot on medium heat. Break it up with your spatula.
As sausage is beginning to brown, add onions to the sausage. Keep breaking it up with your spatula.
Add garlic. Be careful not to burn, turn the heat down if you need to. Sausage should be cooked at this point.
WINE! Add half of your wine to deglaze the pot. Use your wooden spoon to scrape all that browned goodness from the pot. Add the rest of the wine. Stir to incorporate with the ingredients.
Add tomatoes. Stir. Add salt, pepper, cayenne, adobo. Stir again. Taste! Add more spices if you need to!
Bring sauce to a boil. Taste again. Do you need more salt or cayenne?
Turn the heat to low and simmer for 20 min -2 hours, stirring occasionally. Depends on how soon you want to eat!
If you're simmering for 20 min, add your pasta to the boiling water and salt, cook according to the directions.
Drain pasta, put a little bit of sauce at the bottom of a bowl, add pasta, put more sauce on top and mix.
Serve pasta into bowls, spoon more sauce on top and garnish with chopped parsley!
