Herb crusted racks of lamb. I spent awhile crafting the recipe for the sauce, which, if my research was accurate - hasn't really been done before. Blackberries, tempranillo wine, preserved lemon, rosemary (just a tiny bit too much), thyme, and a touch of mint, simmered with a few Arbol chilis towards the end. The chili brought all the flavors back through the palate and left a mild warmth behind.
Arugula salad with pomegranate arils, shaved golden beet, red Anjou and bosc pears, shaved red onion. Super basic preserved lemon and roasted garlic vinaigrette. Ricotta salata cheese.
Very simple roasted red and golden beets.
Bread roll for carb.
