When did we see the cowboy?

So this is probably me being 100% obtuse, but online I’m seeing people say we see the cowboy 3 times in Mulholland Dr? I only counted twice though, the first scene obviously and then the scene where he tells Diane to wake up. Was there another scene I missed? A deleted scene or something?
Edit: thanks for the help. I rewatched the dinner scene and you can indeed see him for like 2 seconds lol. I guess that’s why I missed it.
