Can someone give me a “Tank Cycling for Dummies” course?

I’ve tried to google extensively for what to do while cycling the tank to get it ready for the big boi I rescued from neglect. I’ve had fish before when I was younger but didn’t put anywhere near as much effort into it as I wish I could have. Really what I need is a list of “if xxx do yyyy” things to go off. Here’s the ones I can think of off the top of my head, and any answers are greatly appreciated. I use API Freshwater Master Kit to check levels, Seachem prime for each daily box water change, Seachem Stability in actual tank per bottle directions, Dr Tim’s ammonium Chloride solution for ammonia dosing. I’m trying my best for the guy. He’s only ever known a shoebox since his last owner got him and I want more for him.

1-Ammonia going down, nitrites staying same, nitrates going up 2-ammonia going down, nitrites and nitrates staying same 3-at what levels of nitrite or nitrate should I do a water change? Currently ammonia goes down by about 0.5-1ppm per day while nitrite stays around 5ppm and nitrate anywhere from 20-80ppm 4-really any kind of basis of what is “normal”. Should I expect the nitrite to stay like it is or is that weird?
