Still not had filets de perches - after 10 years

It's just never really appealed to me, various presentations, sometimes apparently swimming in 'juice' other times pretty dry looking and often looking like there's no way it will fill me up.

However being somebody who actually loves most fish and seafood, I think the big day has come.

But how do I know if I got a good version? Is there anything I should know or ask for? And will i need to pick out bones?

I'm not going to travel especially, just going to a fairly local auberge.
