Hello everyone! I recently got a bottle of St George Terroir gin, and whoof that's a lot of fir. I basically can't taste anything else. Even diluting it 3:1 (using tanqueray) still features it pretty strongly. I've considered decanting some into a dash bottle and using it like bitters, but there's a lot. If anyone has suggestions for things to make which might balance this gin out, I'd love to hear!
For reference, I've primarily tried gins in general in a 4:1:1 mix of gin, simple, and lemon juice. On my list of stuff to try with this gin are corpse reviver #2, gimlet, gin and tonic, and monkey gland. I'm wondering/hoping the fir might play well with the strong licorice-ness of absinthe, but aside from that I don't know what else could stand up to it.
