So, I guess not everyone on this sub goes about things the same way. I love seeing everyones lunch boxes all lined up looking scrummy, but I get really sick of the same meal every day. Instead every Sunday hubs and I make a few 'big meals' like curry or bolognaise or macaroni and keep a portion or two in the fridge, and put the rest in the freezer. I tend to take last night leftovers to work with me the next morning.
We've built up a good stock and every night we choose what we want for the following day, and move it from the freezer to the fridge, then when we get home all we've got to do it heat it up (and add rice, or veg or whatever).
Anyway, I'm looking for some new ideas to pop in the freezer and I thought this was the perfect place to ask, since everyone here is so used to cooking in bulk.
The other problem is that in Scotland winter is very cold and we travel a long way for work, so as you can see from the examples above we tend to go for quite hearty meals, often stews and soups as well, because we need something hot and filling after our long cold days. I'm told it's coming into summer now, so if you've got any suggestions for lighter meals that would be really good!
