I grew a latex monster in my tubeless wheel within 3 days

I converted to tubeless on thursday and on saturday went for my first ride with them. On sunday I noticed that there was a funny noise when I rotated my front wheel, like something was inside the tyre. I made a video. When I spin the wheel quickly you can see it bobbing up and down. That isn't me, it's the centrifugal force of whatever is inside the tyre.
I took the tyre partially off to take a peek. This is what greeted me.
Um so I removed it, topped up my sealant and re-installed the tyre. It's holding pressure. Also I had no problems holding pressure at the weekend. I'm using caffe latex.
On the plus side I have a new desk toy... sculpture... thing...
