Choosing The Right File System Configuration

Hi There All Gentoo User & Devs , I am a gentoo users for several years ,but recently I got a new laptop which has
1) 256 gb m.2 nvme 2) 1 tb m.2 nmve 3) 1 tb hdd 7200rpm

Now the question or thoughtisi I want my system like this

1) installing hackintosh on 256gb. , installing gentoo on the 1 tb and 500 gb(hdd) as a shared partition for Both OS & 300 gb(hdd) only for the linux & 131gb(hdd) as a hidden partition

2) above the configuration will remain the same but except I will merege(using lvm) both ssds

Which of the above should I go for lvm or without lvm and why?

Now second part. Which file system should I choose I have 3 in mind ext4, btrfs, bcachefs 1) ext4 is really stable but I like CoW file systems 2) I have faced problems with btrfs 3) bcachefs I am preferring right now , but it's a very new and I don't have any experience with it ( would like to have it though)

Which file system I should choose and why?
