New Segment. Bamba’s Bar Bite of the Week:

Backstage's resident food geek /u/para_bailar_la_bamba has decided to join the Thirsty Thursday crew with "Bamba's Bar Bites," a segment designed to showcase bar and pub snacks from all over the world for the people on backstage to enjoy! With the inaugural snack being unveiled tonight, he knew it had to be something exciting, and it had to be the epitome of tapas. Without further ado, Bamba’s Bar Bite of the week is:

Patatas bravas

Essentially a Spanish version of pommes frites, these traditionally deep-fried golden potatoes have been quartered and boiled before being tossed on olive oil and roasted in a screaming hot oven until wonderfully crispy. You then have the choice of drizzling the patatas with one or both of these savory sauces: a robust tomato sauce spiced with garlic, paprika (Spanish, of course), cayenne pepper, cumin, and a splash of young Garnacha (also Spanish) a zingy garlic aioli let down with a squirt of fresh lemon juice! The dish is finished off with a sprinkle of chopped Italian parsley and coriander/cilantro.

The Spirit/Cocktail of The Week. Based on chatter throughout the week, or my own instinct I will highlight one Spirit/cocktail as something either to be celebrated or experimented with.

The Spirit of the Week: Rabbit’s Tinto de Verano

• Borsao Campo De Borja (A Spanish Red wine, 80% Garnacha 20% Tempranillo)
• Fresh Lemon
• Fresh Lime
• Club Soda
• Raw Simple Syrup
