Hooked an eel today

I don’t what it is about my fishing spot, but this is the second time I foul hooked an eel. It’s pretty rare only the second time in three years. I’m allowed to keep 25 per day per angler, so keeping one is nearly insignificant in regards to its endangered status. My state is pretty restrictive when it comes to fishing regulations, so I’ll trust them on this. What is the general opinion on harvesting eels? (This is an American Eel).
