Is there anything stopping the ISK gambling services from simply walking away with everyone's money?

As someone who really enjoys using EVE Bet, I'm curious what guarantees there are that the service, like other famous scams in EVE history, can't just up and leave with everyone's deposited ISK. I don't mean to be accusing, or say that their service is anything less than awesome, it just seems to start out like all those other stories of people throwing more and more money at it (Phaser Inc. comes to mind), and they decide to up and leave someday.
