Can I sew only on water soluble interfacing?

I'm trying to make homemade patches for my shop, and I've been having some difficulties making the edges nice and clean. I saw someone on youtube sew directly onto water soluble interfacing with any fabric.
He was using one of those professional industry embroidery machines, so I was wondering can I do the same thing with my SE625 at home? Or is this something only specific machines can do?
