Crunchy beans in a soup

Sunday night, I made a large pot of soup to fill my dinner needs for the next few days. Among other things, I used dried beans. I soaked these plenty beforehand (or so I thought), and went about cooking my soup. When I finished, having already eaten that evening, I packaged it all and put it in the fridge. Last night, when I warmed up a bowl in the microwave, I dug in to find that the beans were still crunchy. I guess they hadn't been cooked enough after all.
Can my soup still be saved? Would simmering a bowlful on the stove top for an hour or so fully cook the beans?
