I'm an avid home cook and also a huge meat lover, but I got Thug Kitchen for Christmas, and didn't realize until I was through the 3rd or so recipe that it's vegan! It's really changed my outlook on vegan recipes.
I've been cooking through it and have altered my diet a bit, only really eating meat/cheese/eggs on the weekends. I can feel a difference physically and am considering cutting down significantly on the meat I eat.
However, a lot of the vegan resources I seek out seem very preachy and activist-focused. I just want to eat more veggies and spend less money on meat at the grocery store!
Side note, if anyone cares: This diet has also appealed to me as I've tried paleo/low carb before, but they still revolve around a lot of lean protein and also cut out certain plants like legumes and rice. I'm really enjoying my beans and rice, which form a complete protein and are really cheap!
