New to this hobby and need advice.

I recently turned my garage fridge into a curing chamber. I just finished curing my meat and noticed that the cured meat tasted like the smell of the refrigerator. I bleach washed my curing chamber before putting in the meats to cure. The chamber smells like my meats as well. How to I negate this or fix this problem.
