How to make a caramel gauche?
I wanna make a caramel ganache for a cheesecake, and Iām wondering how to go about it. I have heavy cream, semi sweet chocolate, sugar, and caramel sauce. I figure all I need to do is heat up the cream and stir in the sauce with a lil chocolate and butter, but Iām not too sure and would love some advice
