I've never even cooked a whole duck before, but I saw some on sale so I bought it...I was chatting with my mom, and she suggested I should make it on the grill for the Thanksgiving I'm hosting. My dad's using the oven for the turkey, so the duck can't go in there. So now the low pressure roast duck on a random Saturday has turned into BBQ the duck and serve it for a holiday.
I've got a pile of Apple and Cherry wood, plus coal to burn in an OKJ Judge barrel style grill. I'm good in the kitchen in general and on this grill, so what are your suggestions, tips, and tricks?
